Recipe for a Friendly Get Together

Today, here in South Louisiana the weather is absolutely BEAUTIFUL!  It is the kinda of day where you want to be outside and get together with friends over good food. Originally my husband and I had planned on going out to eat – but with such great weather we decided to stay home.  This was a VERY last minute decision and after a busy work week I certainly did not want to make tonight’s meal complicated or with a big clean up.  It is Lent, so we  also avoid meat on Fridays, which means lean hamburgers or turkey burgers are out. I thought and thought about what to make – I wanted something EASY, with few steps, but also something light, and  TASTY.  Then, I remembered one of our FAVORITE salmon dishes and today I am going to share it with you.

This salmon dish always WOWS my dinner guest …here is the recipe:
1 pound salmon
1/4 cup sun dried tomatoes (chopped, without oil is going to be a leaner option)
1 Tbsp dill (fresh or dried work)
1 Tbsp lemon juice or you can use lemon pepper
1/4 cup reduced fat feta cheese
1 package mushrooms (sliced)
2 tsp black pepper
2 Tbsp pine nuts (optional…tonight I wanted FAST and EASY…the little store I went to did not have pine nuts, so I am not stressing it is good either way – I promise!)

Directions: Pre-heat oven to 350 F. In a baking dish place down a sheet of foil, then salmon. Top with all ingredients listed. Wrap in foil. Bake for 30 – 40 minutes. Viola – a FABULOUS, healthy, easy, and very tasty meal!!
