Homemade Granola Bars

April 24, 2014

This is a healthy and delicious recipe of chewy granola bars. All the ingredients are clean and are probably already in your kitchen. It so easy and quick to make. This is a perfect snack for athletes or anyone who wants to eat healthy! Freeze them and take them on the go. These bars provide 5g of protein and 4 grams of fiber per serving.

Yields:20

Ingredients

2 cups pitted dates

3 cups old fashioned rolled oats

1/6 cup dried cranberries

1/6 cup raisins

1/6 cup chia seeds

1 cup roughly chopped raw almonds

3/4 cup alomg or peanut butter (natural style)

1/2 cup honey

Start by portioning all ingredients into bowls. Put peanut butter and honey in microwavable bowl together.

Place dates in a small bowl and cover with water. Microwave for 2 minutes. Drain water and place dates into the food processor. Pulse until finely chopped. Microwave peanut butter/honey for 30 seconds and stir. Make sure peanut butter/honey is warm with a thin consistency but not hot enough to burn yourself.

Place all ingredients into a large bown and mix together with hands. Gloves are hard to use when mixing all the ingredients because of the consistency. I decided to use my hands. Mix until all ingredients all distributed evenly.

Spoon granola mixture on 13×9 dish and spread evenly. You can use plastic wrap to press it down in the pan. Place in the freezer until set, about 1 hour. Portion into 20 bars.

They turned out delicious! Next time I make them I think I will add a little bit more peanut butter and honey. You could also make them with almond butter. Sometimes they they to fall apart so you might want to freeze them for over an hour.
