This Saturday morning everyone in my house was up particularly early as my husband was heading out of town for the day to tackle a new hunting project. It was way too early to head to the gym as the childcare is not open till 8:00 a.m. so I found myself with dabbling in the kitchen. I first had the urge to make Pumpkin Protein Pancakes (a recipe that was shared with me years ago while working at Telos Fitness Center), however I was out of pumpkin as well as traditional oats – which means that recipe was out.
I began to search the net and found a recipe that looked pretty easy to do but used instant oatmeal and artificially flavored protein powder – and I knew with a few modifications I could make a substitute that was higher in fiber without artificial ingredients. Here is what I came up with – I hope you enjoy!
¼ cup steel cut (or Irish) oats
1 egg
2 egg whites
1 scoop Jay Robb Chocolate Protein Powder (I like his product because does not use aspartame but instead Stevia)
½ cup fresh or frozen blueberries
Mix ingredients in a blender and then cook on a skillet as you would regular pancakes! Serve with agave nectar, pure maple syrup, or one of my favorite toppings is to defrost frozen blueberries and use the natural juice. Enjoy!
Nutrition Facts for the whole recipe = 411 calories, 8 grams fat, 44 grams carbohydrates, 6 grams fiber, 40 grams protein.
